- JERK CHICKEN

- 1/2 cup minced green onions
- 1/4 cup orange juice
- 1 tbsp. minced gingerroot
- 1 tbsp. minced hot pepper
- 1 tbsp. lime or lemon juice
- 1 tbsp. soya sauce
- 1 clove garlic, minced
- 1 tsp. allspice
- 1/4 tsp. cinnamon
- pinch of ground cloves
- 2 pounds chicken drumsticks and/or thighs

- In shallow glass dish, combine onions, orange juice, ginger, hot
- pepper, lime juice, soya sauce, garlic, allspice, cinnamon and
- cloves. Add chicken pieces, cover and marinate in fridge,
- smurgling occasionally for up to 8 hours. Remove chicken from
- marinade and shake off excess marinade.

- Barbeque on greased grill at medium setting for 30 minutes or
- until juices run clear when pierced with a fork. Turn every 10
- minutes and drizzle with marinade during last 15 minutes of
- cooking time.
